Sweet Potato Waffle
Sweet Potato Waffles
What You Need 
  • OKO River Sweet Potato Flour Cake Mix

  • 3 Eggs

  • 1/3 Cup Heavy Cream

  • 2/3 Cup Milk

  • For Cake:  Preheat oven to 325 degrees Fahrenheit

  • For Cake: Butter an 8" baking pan

  • For Waffles: Heat waffle iron

Next Steps
  • Separate egg yolks and white in two separate bowls

  • Combine egg yolks, cream, milk, water, and essence; mix well

  • Add softened butter to dry mix (do not melt butter)

  • Slowly add combined liquids to cake mix and butter; stir or mix

  • Whip egg whites, then gently fold them into batter

  • Place batter into baking pan or onto waffle iron

  • Bake for 35-40 minutes (insert the blade of a thin knife into the center of the cake. If the knife comes out clean, the cake is done. If batter or crumbs stick to the blade, let your cake bake a few minutes more and retest)

  • When done, remove pan from the oven and let cool 

  • If desired, frost when cool
